To the Austin coffee community,
This has been an incredibly important project for all of us involved in initiating this growing snowball that has resulted in the product whose first iteration is presented in front of you. Throughout Lydia's inception of the project and our gradual companion on board the ship, the project has changed a lot throughout the course of an eventful year, for both Austin coffee and our own personal lives. As a result, this collection of lovely coffees also represents our celebration of this journey, the stories and expertise our Austin coffee individuals have collectively accumulated, as well as our celebration of each other. They are stories of warmth, groundedness, and love, topped off with the brightness of vibrant personalities. This growing network of connections, no matter how evident, permeates through every corner of every shop and every team you observe around this weird city.
Thus, along those core characteristics, our idea for this first iteration of the box is a celebration of those two notes regarding the community - Love and Vibrancy, represented through the two most commonly-presented notes of global specialty coffee - Chocolate and Berries.
Given this prompt, our roaster friends were incredibly proud to showcase to our community the below selection of their coffees. All of these coffees are their most recent offerings, and was a culmination of their respective teams’ stories of growing and exchanging conversations with the Austin coffee community of producers and consumers. And this is our love letter to the growth all of us have accomplished within this space.
This is an incredibly smooth and bright coffee, produced by the Juan MartĂn Farm located in Cauca, Colombia. We taste smooth and subtle red wine, raspberry, and jasmine tea. Consistent with Wild Gift’s unique roast profile for single origins, this light/medium roast produces more ultra-fines that contribute to a full-bodied mouthfeel and a hint of dark-chocolate astringent texture. This resulting bean is for those who enjoy sweeter cups and delicate tea-like brews, as well as those who would appreciate a versatile adventure in home brewing and dialing in the absolute perfect cup.
This coffee comes from a producer friend named Jairo Ruiz who started this farm for the purposes of experimental growing and processing. Pink bourbon is a varietal that was discovered only a handful of years ago in Colombia. It's harder to determine when this coffee is all the way ripe as they are generally looking for full red cherries. Pink Bourbons also typically produce very delicate, sweet, floral profiles that aren't found in any other coffees in Colombia. In this offering we get notes of rose, candied ginger, and blossom.
